Cauliflower Mole Tacos

Who doesn’t love tacos? Probably it’s one of the most favorite and popular Mexican dishes that have ever existed, and this quick and easy Cauliflower Mole Tacos are delicious! 
This recipe is so simple to make and needed to be shared.


Growing up in a Mexican household mole it is traditional. My mom loves to make mole, but when she doesn't have time she uses Doña María® Mole Paste. 

We really like the flavor because it's not spicy at all, it adds the right amount of spice to any dish. The beauty of a mole sauce is the depth of flavor, this isn’t some "regular" sauce. It is a combination of chile peppers, chocolate, peanut, garlic, sesame seeds and other ingredients. But don’t be afraid of all those ingredients, that makes mole with such unique flavor!


Mole is not only for special occasions, celebrate mole everyday with Doña María® Mole Paste. 

To make this amazing tacos you need to make the mole, then you need to roast the cauliflower. 
Once you have the mole with the cauliflower, you’re ready to enjoy this delicious tacos.

To make the tacos I use cactus tortilla (tortillas de nopal) that I got on my local store. Then I drizzled some sour cream and sprinkled queso fresco, cilantro, purple onion and radish.



Just look at those colors colors! I know this tacos aren't your traditional tacos but they are truly delicious, and can even pass as a balanced meal! These babies will keep you satisfied and full with a happy tummy!

Once you make this tacos they will disappear before you know it. And for good reason, because they're delicious!




Cauliflower Mole Tacos

Ingredients:
  • 1 (8.25 oz) Doña María Mole Paste
  • 5 cups of chicken broth
  • 1 head of cauliflower
Tacos
  • Tortillas
  • Purple onion, sliced
  • Radish, thin sliced
  • Sour Cream
  • Queso Fresco, crumble
  • Fresh cilantro, chopped

Directions:

Heat the oven to 400˚F.
Separate the cauliflower florets and chop them into bite size pieces.  
Place the cauliflower florets onto a large sheetpan and drizzle with olive oil. Toss everything so the cauliflower is coated with the olive oil.
Roast for 25-30 minutes or until soft.

To prepare the Mole Doña María® Mole Paste, empty the jar of into a saucepan.  Slowly stir in 4 cups of chicken broth.
Heat the sauce over medium heat, whisking occasionally to prevent lumps from forming. 
Add more chicken broth as much as necessary depending on how dense you want your mole.
Turn heat off and add the roasted cauliflower florets. Mix and tet it stand for a couple of minutes.

To assemble the tacos, warm up the tortillas, add the cauliflower with mole sauce, then some sour cream, queso fresco, cilantro, purple onion and radishes.
